This bread recipe comes to me from my online friend, Goodsie. I do use this recipe a lot, because it is so easy to make bread or rolls with. It's quite quick to throw together too.

I never bake my bread in the machine. I use the dough program, when it is ready I punch it down, cut it with some clear fishing line held tight, stick it in or on my greased pan let it rise for 30 min - THEN bake.

It's such a simple easy to make bread

1 1/8 cups warm water (110 degrees F/45 degrees C)
3 tablespoons honey (or up to 1/4C if you like a sweeter bread, I don't)
1 teaspoon salt
2 cups whole wheat flour
1 cups bread flour
2 tablespoons vegetable oil ( I use melted butter)
1 1/2 teaspoons active dry yeast

1. Add ingredients according to the manufacturer's directions to your bread machine. Use the wheat bread cycle and light color setting. (I use the wheat dough setting, bake at 350 for about 25 min. I sometimes put a pan of water in the oven, but I haven't noticed a big difference in the bread).

Now, I use the Bread Machine Plus, and I always put my yeast, water, and honey in FIRST and this works well for me. Some people make a well, whatever- I don't get as good results that way personally. Putting the yeast, honey and water in first - that way the yeast activates well, and the bread rises good. It does make a good bread just in the bread machine too, if you want to do that.

It took me a lot of stumps of bread to figure out what the problem was. I highly recommend, if you bake bread, that you catch Alton Brown's GOOD EATS show on making bread. Once I understood the science of making bread, I really can make it anyway I want now - bread oven or not. Or, if something is not right, I can look at it and tell. I couldn't do this until I understood the process that flour goes through on it's way to becoming bread. For me, that made all the difference in the world in my baking ability.
